Same thing would have happened had they fed their kid skim cow's milk and apple juice instead of milk or soy infant FORMULA. Modern infant formulas are made to as closely as possible duplicate the nutrients of human milk. Soy or cow's milk based, doesn't matter - what matters is that it is enriched with a range of nutrients to make it suitable for a baby whose main source of calories and nutrition is what is in it's bottle (i.e. if it isn't getting breast milk).
